Of the two, khaman is more commonly sold in the market and is most often referred to as Dhokla, which, of course, is the wrong name for the dish. It is a very popular snack from Gujarati cuisine.   1. In a large bowl sieve besan and rava. Add ginger paste, green chilli, haldi, sugar, hing and oil and lemon juice.
  2. Prepare a smooth batter adding necessary water.
  3. Just before making the waffles add the fruit salt and mix gently.
  4. You can alternatively use a pinch of baking soda.
  5. Preheat a waffle iron machine according to it's manual.
  6. Apply little oil on waffle plate. Immediately pour batter into the waffle plates and spread evenly.
  7. Put some oil over the batter and close the lid.
  8. Let the waffles for atleast 5-7 minutes until nicely golden.
  9. Remove it from the waffle maker.
  10. Tempering :- heat oil and add mustard seeds, sesame seeds and pinch of hing also.
  11. Add green chilli, few curry leaves and allow to splutter. Further add 2 tsp water and sugar and salt and mix well and boil the water well.
  12. Add lemon juice and mix well. Pour the tempering over waffle.
  13. Garnish with freshly chopped coriander and grated cheese.
  14. Serve with garlic, red chilli chutney and green chutney.

Both khaman taste quite different as in besan khaman you need to add sugar and lemon water to make it moist else it feels very dry while eating, but vati daal nu khaman or chana daal ka dhokla is not as dry as besan khaman.
