I followed the recipe as stated except I was out of rum extract so I used double the amount of pure madagascar vanilla extract. I will replace my regular waffle recipe with this one. For the pancake syrup used in this I used the Absolute Best Pancake Syrup recipe (love) from this site. The rum in it makes all the difference and when the waffles cook up, the inside sets almost like a pancake while the outside stays crisp.

Instructions to make Rum Waffle:
  1. In a medium size bowl add the 2 cups water and 2 cups sugar and mix it using a spoon for 5minutes.
  2. In a small bowl add the 3 eggs,2 tablespoon butter, 1/3 cup oil and the1 teaspoon water and mix it using a mixer in medium for 5minutes.
  3. Add sugar mixture and the egg mixture in a large bowl and mix it again using a mixer mix it for 5 minutes.
  4. After it mix add 3 cups flour, 1 teaspoon cream of tartar,1 1/2 teaspoon baking powder,1 teaspoon baking soda, and the 2 tablespoon butter and mix it again with a mixer for 10 minute or at least until it is combined.
  5. After it is mix at 3 teaspoon rum slowly to the mixture and then mix it up for 5 minutes
  6. Then using a ice cream scoop take 2 scoop of the batter and then you put them into the machine and cook it until golden brown or usually I cook it for 10 minutes.

Top with whipped cream , jam, chocolate spread or a veil of sugar and you get a lovely addition to your breakfast arsenal. Let's get this out of the way up front.
