Mixed veg saagu is a popular veg curry from Karnataka that is usually served with poori or chapati. Its mostly served in a south indian thali in restaurants.
Instructions to make Veg Sagu and poori:
- Wash, Peel and cut and Pressure cook the potatoes, chayote, carrots, peas and keep aside.
- Grind all the ingredients under 'To grind' section by adding little water and keep aside.
- In a kadai heat oil, add mustard seeds, Jeera, red chilli, curry leaves and saute. Then add chopped onion and fry till translucent.
- Then add chopped tomatoes and salt and fry for few minutes. Then add boiled veggies, turmeric powder, and little water and cook for 5 minutes.
- Then add the ground paste, mix and cook for 5-6 minutes. Adjust salt and water as per consistency needed. Serve hot with poori or rava idli or set dosa.
