I placed a tiny cube of pepper jack cheese a tiny piece of canned mushroom and a tiny tear of frozen spinach (defrosted) in each cup then filled with the egg mixture.. In small bowl, stir Bisquick mix and butter until blended.

  1. Take 250 ml flour
  2. Take 1 ml salt

  1. Sift dry ingredients together
  2. Grate margarine over the flour-mixture. Then use fingertips to rub the margarine into the mixture.
  3. Mix lemon juice and ice water together. Sprinkle over the flour mixture, then mix with a fork.
  4. Lightly press the dough together and place/wrap in a plastic bag. Put in fridge to cool.
  5. Once the dough is nice and cold, roll it to a thickness of about 2mm on a floured surface.
  6. Take pieces of the dough and press it into the form of a quich base (flat bottom, sides coming up) inside a greased muffin pan. Do not stretch the dough out. Then prick the bottom of the quich bases with a fork. Bake at a temp of 200ºC for 8-10 min.
  7. Let the bases cool.
  8. Once cooled, fill with favourite filling. Suggestion: mushrooms, cheese, bacon, spinach and egg, which is quick and easy to prepare in a pan while the bases cool. Or try a sweet option, eg. jam, chocolate mousse, meringue or thick custard.

I sprayed the bottom of the muffin tins with a little Pam and them placed the bread inside. I added an extra egg to the mixture, some chopped Canadian bacon. Mini quiches filled with Cheddar and Swiss cheese, instant potatoes, and sausage for a hearty, on-the-go meal. Make ahead for easy entertaining or breakfast! My family loves a good quiche recipe.
