I've had the idea of using the classic smoked salmon and sour cream combination in a quiche for a while but only recently got round to making it. While crust is baking, in a large bowl beat eggs, add milk, half and half, parsley and salmon. Layer bottom of the crust with the smoked salmon. Put a layer of grated cheese on top of that.

  6. Place pie crust in a pie dish and spread cheese mixture evenly across the bottom. Then layer the onion/tomato mixture over the cheese. Sprinkle the diced salmon evenly across the contents of the pie. Finally, gently pour the egg mixture over the top of the filling.
  7. Bake at 400°F for 40 minutes or until the center is no longer wet.
